Marshmallow Fondant Recipe
How to make Marshmallow Fondant ( also known as MMF )
by hand.
Ingredients:
16 oz. white mini marshmallows. (Large marshmallows will work, but you will have to vary the heating time.)
2 lbs. powdered/confectioners sugar
Water, no more than 4 Tbsp. (Too much H2O will make it unstable and crumbly.)
Shortening
Optional: Food gel, Food coloring, Flavor extracts.
Instructions:
1. In a microwavable bowl, mix together 2 Tbsp. of water and 16 oz. of marshmallows, making sure the water has been incorporated into the marshmallows. It will seem as if the marshmallows are melting; this is normal.
2. Microwave on high in 30 second intervals while stirring in between until melted. Do not microwave for more than 3 minutes total.
Optional: Once melted, stir in your coloring and/or flavors.
3. Grease your working surface and hands with shortening.
4. When your marshmallow mixture has reached a safe temperature to handle, pour it onto your working surface. Knead 1 lb. of the powdered sugar into the mix, adding the remaining as you knead until you have the right texture. Sometimes, there will be sugar left unused.
Add more sugar if your fondant seems too sticky.
Add more water if your fondant seems too dry.
Tips:
Keep your fondant wrapped in plastic wrap when you are not using it or it will dry out.
Sometimes, I microwave my marshmallows in two batches.

Generic brands are recommended.
Shortening is for the purpose of greasing the table, and your hands.
It is not supposed to be a key ingredient to MMF.

Marshmallow fondant rocks! I like your tip to grease the counter and pour the marshmallows out then knead the sugar in. I was trying to stir it all up in a bowl. Not so good. Thanks!

I made MM fondant for the first time and it was great! Thanks for the tips. Like anonymous above, I tried to stir it all up in a bowl, rather than pouring & kneading. I think I will definitely use flavoring next time, though. Mine tasted like pure confectioner's sugar.

I previously asked you about how to do MMF in case there is no microwave and only a stovetop. Just wanted to share with you and your followers that it was a success. I tried it out for my friend -- I basically melted the marshmallows on a double broiler and it came out just fine. Hello! Thank you for posting this! I have a question though, as I have never used mmf before. I would like to cut out shapes from the mmf and place on top of a cake that is covered in frosting. Will this affect the marshmallow and make it gooey as the day goes on? I'm worried the mmf might "fluff" up like a marshmallow when coming in contact with the moisture from frosting. Any thoughts would be GREATLY appreciated! thank you a million!

Does MMF taste good by itself or would you add flavoring? This is my first time using fondant period! I'm making my daughter's 1st bday cake because everyone in my area is booked! So I need ALL the help I can get, thanks!

Is there a flavor extract you would recomend adding that would take the super sweet taste down some? The powder sugar is so sweet!?
Also is there a buttercream you would recommend to go under that would not be super sweet?
I am attempting to make my own wedding cake, but i have a year to practice...
I've made this by putting the powdered sugar in my stand mixer. Then pouring the melted MM over it. Turn on the mixer (low, increase to med) until well blended. This really saves time although fondant has to be kneaded to acheive the best consistency. Also, roll the finished product into a ball, coat with a light coat of shortening and wrap tightly in plastic wrap. Let it sit out (not refrigerated) for at least 4 hours or overnight before using. When ready to use, knead it again at least 10-20 times. This helps any small clumps of sugar left in the fondant to disentigrate so it won't leave bumps on your final product. Fondant, as long as it's tightly covered in plastic wrap, does not need to be refrigerated. You can also microwave it for 15 seconds at a time to soften it before re-use.

8oz=1cup 16oz is a pound so 4 cups would be your answer.
@Veronica, thanks a million for the MMF stove top. I do not use microwaves due to the radiation it puts in the food. I'm so excited to try this, thanks a million. ;-)
